NŌIA, Rooftop Dining in San Miguel de Allende, Unveils at NUMU Boutique Hotel

NUMU Boutique Hotel, one of the newest additions to historic downtown San Miguel de Allende, is pleased to introduce NŌIA, its new Mediterranean rooftop restaurant showcasing the finest Mexican ingredients. Featuring breathtaking views of one of the world’s most beautiful cities, NŌIA offers hotel guests and destination visitors a full-sensory experience, including the sights and sounds of this spectacular destination alongside a fresh menu blending local ingredients and coastal European influences.

NŌIA, inspired by the Greek word “eunoia,” meaning “good idea,” is led by Executive Chef Omar Tovar. A Mexican native, Chef Tovar spent formative years in Spain refining his craft. His career includes roles as a sous-chef at Punta Mita Development and Secrets and Dreams Vallarta Bay Hotels. Drawing on these diverse experiences, he has developed a signature style melding the fresh flavors of the Mediterranean with Mexican ingredients and techniques.

“At NŌIA, my vision is to create family-style dishes that encourage sharing and connection, reflecting the essence of NUMU Boutique Hotel,” says Chef Tovar. “Rather than confining myself only to traditional Mexican cuisine, I wanted to design a menu inspired by my studies along the Mediterranean coast. NŌIA blends my deep appreciation for the art and energy of San Miguel de Allende with the vibrant, diverse flavors of the Mediterranean, creating a distinctive fusion that honors both culinary traditions.”

NŌIA’s menu highlights fresh fish and meat grilled over an open flame and served with simple yet flavorful preparations. A roster of traditional Mediterranean spreads and sides are personalized with Tovar’s unique perspective.

Like NŌIA’s dining experience, NUMU’s wine and cocktail program draws global inspiration while remaining firmly rooted in Mexican traditions. Mixologist Amer Heneidi’s drinks menu incorporates savory and herbal ingredients like nopales (cactus) and hoja santa (pepperleaf) to create eclectic cocktails such as the Zithu, made from a nopal and hoja santa shrub, mezcal, Cointreau and lemon, or the Zixtu—crafted with Mexican blanco tequila, Sinaloan sake, artichoke liqueur, and a hint of Campari, served Negroni-style. Wines are sourced exclusively from Mexico’s finest wineries, emphasizing the central Guanajuato region. Esteemed winemakers include Santísima Trinidad, Tres Raíces, Cuna de Tierra, and Guanamé.

San Miguel de Allende is a UNESCO World Heritage Site and one of the most iconic Mexican cities. It is also renowned for its architectural and stylistic connections to Europe’s most charming places. Keeping with this cross-cultural identity, the hotel’s name, NUMU, is drawn from the region’s Indigenous Otomi language and means “crossroads.” NUMU embodies this blend of cultural influences through its diverse culinary offerings, rich artistic heritage, and architectural splendor, creating a unique and distinctive character.
