Together, the two celebrated chefs, whose restaurants collectively hold seven Michelin stars, will shape a new culinary era for the Waldorf Astoria Hotels & Resorts brand in the heart of London.
Bringing together award-winning talent and one of London’s most storied landmarks, the partnership between Waldorf Astoria and the two chefs will transform Admiralty Arch into a must-visit destination for discerning diners. Smyth’s reputation for precision and modernity, combined with Boulud’s refined French sensibility, reinforces the brand’s tradition of pairing extraordinary chefs with exceptional settings. Admiralty Arch is poised to become one of the city’s most coveted dining addresses.

Coreus by Clare Smyth
Set within the historic former residence of the First Sea Lord, Coreus will be Clare Smyth’s exclusive fine-dining concept for Waldorf Astoria London Admiralty Arch. The restaurant will pay homage to Britain’s coastlines, fisheries, and family-run farms, honoring the country’s culinary heritage while highlighting its diverse marine life.
Drawing inspiration from the site’s maritime legacy, Smyth plans to spotlight responsibly sourced seafood, high-quality meats, local oysters, and seasonal vegetables—bringing lesser-known British ingredients into the spotlight.
“Opening Coreus at Waldorf Astoria London Admiralty Arch is an honour,” Smyth shared. “Coreus represents the heart of everything we do—warmth, collaboration, and a more relaxed interpretation of luxury.” The restaurant’s name blends “Core,” meaning heart or essence, with “Us,” symbolizing unity among guests, producers, and the team.
Smyth will also introduce her signature Whiskey & Seaweed bar to the property. Inspired by the celebrated “Potato and Roe” dish from her Notting Hill restaurant, the bar will offer a curated collection of whiskies from distilleries across the United Kingdom, complemented by an extensive menu of cocktails and wines.
Café Boulud by Daniel Boulud
Café Boulud marks Daniel Boulud’s distinguished return to London, where he will bring his iconic French approach to Admiralty Arch. Designed as an all-day dining experience, the restaurant will serve breakfast classics, signature pastries, afternoon tea, and seasonally inspired lunch and dinner menus that spotlight Boulud’s most beloved creations.
Perched on the rooftop with a south-facing terrace, Café Boulud will offer sweeping views over some of London’s most recognisable landmarks—including a direct sightline down The Mall to Buckingham Palace.
The Café Boulud concept reflects Boulud’s lifelong culinary inspirations, blending French technique with global influences. Each season will introduce new interpretations of classic dishes, expressed through a modern, soulful lens.
