For our pasta course, we selected the Tortello Ripieno alla Carbonara, Spuma di Pecorino con Tartufo di Stagione(Tortello Filled with Carbonara, Pecorino Cheese Foam with Seasonal Truffle).
Few dishes are more closely associated with Rome than carbonara, and Settimo’s interpretation is both respectful and inventive.
The familiar flavors of guanciale, pecorino, and egg were transformed into a delicate tortello that delivered all the richness of the classic Roman dish in an elegant, contemporary format. For our main course, we chose the Filetto di Manzo Laziale Arrosto al Rosmarino e Foie Gras, Sugo di Arrosto, Patate Vitelotte e Verdure di Stagione (Local Lazio Beef Fillet Roasted with Rosemary and Foie Gras, Roast Jus, Vitelotte Potatoes and Seasonal Vegetables).
The dish showcased the quality of regional ingredients that define so much of Italian cooking. The beef, sourced from Lazio, was beautifully cooked and exceptionally tender. The richness of the foie gras complemented the meat perfectly, while the rosemary added an unmistakably Mediterranean character.
Accompanied by colorful Vitelotte potatoes and seasonal vegetables, the dish struck an ideal balance between elegance and comfort. Every element was executed flawlessly, creating a main course worthy of the spectacular setting.
