ARC Restaurant, located inside the luxury Fairmont Waterfront, is thrilled to announce the launch of Sip and Shuck, a limited-time pop-up BC wine and oyster bar experience at the signature Chef’s Bench.
Sip and Shuck invites guests to sit at the Chef’s Bench for a stimulating tasting experience. Situated against the breathtaking backdrop of Vancouver’s waterfront and only steps away from the cruise terminal at Canada Place, the pop-up spotlights small-batch reserves and exclusive pours, offering a daily rotating selection of unique wines sourced from wineries nestled in the picturesque Okanagan Valley.
At the heart of the new pop-up wine bar lies a commitment to showcasing the best of British Columbia’s terroir. Featuring a harmonious blend of East and West Coast flavors, guests will be treated to a daily fresh sheet featuring five varietals of freshly shucked oysters, perfectly paired with a curated library selection of boutique wines available by the glass or as wine flights.
In addition to celebrating culinary excellence, Sip and Shuck will support the BC wine industry, which has been deeply affected by recent climate-related challenges, showcasing some of the finest in quality and innovation as it shines a light on the industry’s resiliency. To enrich the tasting experience, celebrated sommeliers will join the Chef’s Bench on select evenings to share their expertise and insights on the evening’s pours. With unprecedented challenges in the Okanagan region, every sip will contribute to BC’s thriving wine industry, embodying the spirit of community and support.
