Autumn in Venice: New Rooftop Cocktails, Dining and Spa Experiences at Hilton Molino Stucky

From sunset cocktails overlooking the Venetian skyline to seasonal Italian cuisine and restorative spa rituals, Hilton Molino Stucky Venice introduces new reasons to visit the Floating City this fall.

Venice has a different kind of magic in autumn. The light softens over the Grand Canal, the evenings grow cooler, and the city’s narrow streets and picturesque canals invite travelers to explore at a more leisurely pace. With summer’s peak tourism season behind it, Venice reveals a quieter, more intimate side that makes fall an especially appealing time for a romantic getaway or cultural escape.

On the peaceful island of Giudecca, Hilton Molino Stucky Venice is welcoming the season with a collection of new experiences, including rooftop cocktail events, an inventive afternoon tea, Venetian-inspired dining, and rejuvenating spa treatments.

Housed in a beautifully restored former flour mill overlooking the Giudecca Canal, the five-star hotel combines the architectural character of its industrial past with contemporary luxury. Its location also offers a different perspective on Venice, away from the busiest streets yet within easy reach of the city’s celebrated attractions.

Venice Cocktail Week Brings Creative Mixology to the Rooftop

One of the highlights of the hotel’s autumn calendar is its participation in Venice Cocktail Week, October 21–25, 2026, a five-day celebration of the city’s evolving cocktail culture.

The hotel’s Skyline Rooftop Bar, known for its panoramic views across Venice, will welcome visiting bartenders from some of Italy’s notable cocktail destinations for four evenings of collaborative mixology.

The festivities begin on October 22 with Beyond the Classic, featuring guest bartenders from Bar Barrier in Bergamo and Alto Cocktail Bar in Cervia. The evening will showcase signature cocktail creations accompanied by music from DJ Rigo.

On October 23, Two Shores, One Night brings a collaboration with Palazzo Veneziano, with bartenders exchanging venues for an evening highlighting creativity and sustainability.

The program continues on October 24 with Rising Spirits – Where Cocktail Weeks Meet, featuring winners of the Trieste Cocktail Competition and food pairings created by Hilton Molino Stucky’s culinary team.

The celebrations conclude on October 25 with Italy in the Mix – Three Italian Stories, Shaken Together, welcoming mixologists from Sentaku in Bologna and Bar della Musa in Rome.

Guests will be able to explore different cocktail experiences across Skyline’s Venice Terrace, Sunset Terrace, and indoor bar.

With the city’s historic rooftops, church domes, and waterways forming the backdrop, the events offer an opportunity to experience Venice’s contemporary cocktail scene in a memorable setting.

A New Take on Afternoon Tea Above Venice

Beginning October 31, Skyline Rooftop Bar will introduce a new edition of its Mixology Afternoon Tea, combining the traditional afternoon tea experience with imaginative cocktails inspired by Venice.

Served on weekends from 4 to 6 p.m. on the bar’s heated terrace, the experience has been designed around the changing colors and flavors of the season.

Instead of conventional tea pairings, guests are presented with three miniature cocktails from Skyline’s Shades of Venice collection, accompanied by an assortment of sweet and savory creations.

The menu includes prickly pear cheesecake cream with almond and vanilla sablé, caramelized pear with bergamot gel, and white chocolate with orange and cacao.

Traditional scones receive a Venetian-inspired interpretation, including mascarpone cream and Barena honey scones with orange jam, alongside rosemary and Parmesan scones served with herb sour cream.

Savory selections include salmon tartare tartlets, cucumber and carrot sandwiches with dill, and a Venetian-style cicchetto with Robiola cheese cream and wild boar prosciutto.

Everything is presented tableside on a custom-designed tea trolley, creating an experience that is as much about presentation and atmosphere as it is about flavor.

For visitors seeking a relaxed afternoon above the city, the combination of creative mixology, seasonal pastries, and Venetian views offers an appealing alternative to a traditional aperitivo.

Seasonal Venetian Flavors at Bacaromi

Autumn also brings changes to the menu at Bacaromi, Hilton Molino Stucky’s Venetian restaurant.

Inspired by the city’s traditional bacari—neighborhood wine bars where locals gather for small plates known as cicchetti—Bacaromi offers a contemporary interpretation of Venetian cuisine.

Executive Chef Ivan Fargnoli and his culinary team are introducing seasonal dishes that highlight local ingredients and the comforting flavors associated with the cooler months.

New additions include duck, savoy cabbage, and foie gras raviolo; pumpkin and amaretti risotto with a reduction of Birra Venezia Rossa; and fried artichoke with Pecorino foam and Cynar reduction.

The restaurant’s setting adds another dimension to the dining experience.

Original cast-iron pillars, exposed brickwork, and colorful mosaic floors reflect the building’s industrial heritage, while the inviting interiors create an atmosphere reminiscent of Venice’s traditional neighborhood gathering places.

On mild autumn evenings, guests can dine on the canal-side terrace, watching boats travel along the water while enjoying contemporary interpretations of regional specialties.

Restore and Recharge at eforea Spa

For travelers who appreciate a little relaxation between sightseeing excursions, Hilton Molino Stucky’s eforea Spa is introducing two new treatments designed for the autumn season.

The Renewed Skin Body Ritual begins with an exfoliating grapefruit and salt scrub, followed by a nourishing massage using apricot oil. The treatment focuses on smoothing and moisturizing the skin following the warmer summer months.

The Autumn Skin Reset Express Facial offers a shorter wellness experience, incorporating cleansing, charcoal exfoliation, and an apricot oil facial massage.

Beyond these seasonal treatments, eforea Spa features a sauna, steam bath, relaxation room, and Jacuzzi, providing a peaceful retreat after a day exploring Venice.

For visitors spending several days in the city, an afternoon at the spa offers an opportunity to slow down and enjoy some restorative downtime before heading out for dinner or an evening along the canals.

Explore Venice’s Autumn Arts and Cultural Calendar

The hotel’s seasonal experiences coincide with an especially active period on Venice’s cultural calendar.

Art lovers can explore the 61st International Art Exhibition of La Biennale di Venezia, titled In Minor Keys, which continues through November 22, 2026.

One of the world’s most influential contemporary art exhibitions, the Biennale brings international artists, installations, and exhibitions to venues throughout the city, including the Giardini and Arsenale.

Music enthusiasts can discover Biennale Musica 2026 – A Child of Sound, running through October 24, while the city’s creative community also celebrates Venetian design, fashion, and glassmaking.

Additional autumn highlights include:

  • Venice Design Week (October 9–18): Events and exhibitions exploring contemporary design.
  • Murano Illumina il Mondo (through November 1): A celebration of Venetian glassmaking and artistic craftsmanship.
  • Radar Venezia (October 19–24): A fashion-focused event highlighting creativity and contemporary style.
  • Venice Marathon (October 25): An opportunity for runners and spectators to experience Venice from a different perspective.
  • Festa della Salute (November 21): A longstanding Venetian tradition commemorating the city’s deliverance from the plague in the 17th century.

The autumn calendar gives travelers an excellent reason to stay a little longer, combining the city’s famous landmarks with cultural experiences that reveal more of its contemporary identity.

Discovering the Quieter Side of Venice

One of the advantages of staying on Giudecca is the opportunity to experience Venice from a different vantage point.

Across the water from the historic center, the island offers expansive lagoon views, waterfront walks, and a more residential atmosphere than the city’s busiest sightseeing districts.

Hilton Molino Stucky’s landmark building has undergone a series of refurbishments, including the introduction of 24 suites designed by Italian interior designer Biagio Forino.

Today, the property features 379 rooms and suites, a selection of restaurants and bars, and one of the city’s largest hotel spas.

The hotel’s rooftop spaces are among its most distinctive features, offering sweeping views of Venice’s skyline and the surrounding lagoon.

For travelers who prefer to explore Venice beyond its most photographed landmarks, Giudecca also makes an appealing base for discovering the city’s quieter neighborhoods and nearby islands.

In fact, this slower approach to exploring the Floating City is something we recently celebrated in DRIFT Travel Magazine. Read our feature, Venice Reconsidered: Finding Room to Slow Down in the Floating City, for a more personal perspective on discovering Venice beyond the crowds.

A Different Kind of Venetian Escape

Venice may be celebrated for its gondolas, magnificent palaces, and romantic waterways, but its appeal extends far beyond the familiar sights.

Autumn offers an opportunity to discover its contemporary culinary scene, enjoy world-class art, and embrace a more relaxed pace of travel.

With its seasonal dining, inventive cocktails, and renewed focus on wellness, Hilton Molino Stucky Venice provides a distinctive setting for experiencing the city during one of its most atmospheric seasons.

Whether sipping a cocktail above the lagoon, discovering Venetian cuisine, or wandering the city’s quiet canals, fall in Venice offers plenty of reasons to linger a little longer.
