Sandblu, open for its first full season, continues to artfully evolve its guest experience with the opening of Blu, a sophisticated destination restaurant perched on the island’s most iconic terrace. Offering stunning views of Santorini’s famous Caldera, a UNESCO World Heritage site, Blu offers memorable gastronomy rooted in Greek Mediterranean tradition with a refined international touch. Owned and managed by Sandblu, the 150-seat restaurant invites guests to embark on an all-day flavorful journey with dishes that tell a story, whether it’s for enjoying à la carte brunch, dinner or cocktails. 

DISTINGUISHED DESIGN  

Designed by Rockwell Group, Blu balances elegance and authenticity with a warm, modern aesthetic and heartfelt hospitality. The thoughtfully curated environment echos the island’s natural beauty, boasting an expansive white marble terrace with panoramic views of Skaros Rock, the Aegean Sea and the Caldera. Light and airy interiors invite the outside in, blending harmoniously with the volcanic terrain and Santorini’s blue-hued landscape. An open-air bar and reflection pool complement al fresco dining and drink. The melodic soundtrack of a resident DJ and sea waves lapping the cliffside enhance its tranquil ambiance. 

AEGEAN TASTE 

Blu’s menus are globally influenced yet soulfully rooted in Greek heritage with fresh, regionally sourced ingredients embracing the island’s vibrant flavors from the land and sea.  

Dinner service features Greek salads, quality dry-aged cuts of Greek Veal and Spanish Black Angus, fresh catch-of-the-day, and shareable plates such as Sea Bass Crudo, Smoked Eggplant and Semi-cured Scallops. Signature dishes include Lobster Pasta with bisque, tomato, boukovo, basil and sweet wine of Samos and Shredded Oxtail with paccheri pasta, graviera cream and summer truffle. Decadent desserts include Aegina Pistachio with pistachio cream, goat’s milk ice cream, forest fruit sauce hibiscus meringue and pistachio sponge cake. 

The day-to-night beverage menu serves a robust list of spirits, fresh juices, soft drinks and signature cocktails such as the Katsouni Gimlet with Greek gin, katsouni cucumber cordial & fresh lime juice and the Rum Away With Me with white rum infused with Greek herbs, passion fruit purée, homemade orgeat syrup, and lime juice. Brunch libations include the Bloody Marika with tsikoudia infused with florina pepper, tomato juice from Santorini, Worcestershire sauce, black pepper, oregano & salt and the Wake Me Up Before You Coco with Kola nut infused vodka, mastic coffee liqueur, espresso, and cocoa foam. 

Brunch displays a range of options from egg dishes to pastries and healthy bowls. Heartier fare offers classics like the Croque Madame and Lobster Mac & Cheese, and creative indulgences such as the Surf & Turf with scallops, ibérico ham, coconut broth shallot and chili relish, and a Mascarpone Pancake with berries, strawberry jam, mint and orgeat maple syrup.
