Ingredients:

  • 45 ml Matusalem Classic Rum
  • 30 ml Grapefruit juice
  • 30 ml Cinnamon syrup
  • 30 ml St-Germain elderflower liqueur
  • 1 ml Angostura bitters

Instructions: In a shaker, combine Matusalem rum, grapefruit juice, cinnamon syrup, elderflower liqueur, and a dash of bitters. Shake well using a Hawthorne strainer to hold back ice. Fine strain the mixture into a martini glass using a mesh strainer for a smooth finish, free of pulp or shards.

  • 1 oz aged rum
  • 0.5 oz Grand Marnier
  • 1 oz pineapple juice
  • 1 oz orange juice
  • 1 oz grapefruit juice
  • 0.5 oz lime juice
  • Whole milk (for clarification)
  • Coconut foam and lemon zest (for garnish)

Instructions: Create a clarified milk punch by combining juices, rum, and Grand Marnier. Add whole milk to initiate clarification, then strain the mixture to remove solids. Serve cold in an Old-Fashioned glass. Top with coconut foam and lemon zest for garnish.

Instructions: Shake rum, chile liqueur, lime & cinnamon juice, and pineapple juice with ice. Fine strain into your serving glass. Top with citric nitrogen foam and garnish with a confit of pineapple and morita chile for a spicy-sweet finish.
