Hawks Cay Resort Opens New Chophouse and Seafood Restaurant

Hawks Cay Resort, an iconic resort destination in the Florida Keys that reopened this summer following a $50 million renovation, has officially opened its new signature fine-dining restaurant, Sixty-One Prime. The 160-seat, casually elegant restaurant is located in the lobby of the reimagined main hotel and features a creative menu inspired by the flavors of South Florida and the Florida Keys.

“We set out to create an experience that’s completely unique in the destination,” said Executive Chef William Ryan.  “I toured all over Florida during our renovation to find farmers and fisherman who are as passionate about cuisine as we are, and created great  partnerships to bring the best ingredients from the area to our menu.”

Signature elements of the Sixty-One Prime experience include warm, buttery rolls and world-class selections of USDA prime cut steaks, along with fresh seafood and local ingredients. The menu celebrates the restaurant’s commitment to the “Fresh from Florida” initiative created by the Florida Department of Agriculture with a refined farm-to-table approach with highlights that include a Key West pink shrimp with white bean cassoulet and smoked tomato oil, Kurobuta pork belly with apple turnip chutney and blackberry pearls, and McCoy Ranch grass-fed Delmonico with bone marrow fritter and tobacco onions.

“We’re using modern techniques and presentations that will really ‘wow’ guests,” continued Ryan.  “We’re confident Sixty-One Prime is going to put Hawks Cay on the map as a true dining destination.” 

The Sixty-One Prime space includes casually elegant indoor and outdoor dining options alongside a vibrate lounge and bar that features a new cocktail program and a robust wine list.  The full menu is available in the lounge and available for private dining experiences around the resort’s iconic saltwater lagoon or on a guestroom Lanai.
