New Cocktail Bar Drawing Global Attention

Carnaval opened in Lima’s San Isidro district in 2017 and has been drawing global attention ever since. The bar was named the Campari “One to Watch 2018” during the recent World’s 50 Best Bars awards in London and Lonely Planet has recently written about them here, saying: “the imaginative bar has proved Peru’s foodie capital has a place for cocktail lovers.” Bartender Aaron Díaz was a former cocktail creator at top Lima restaurant Astrid y Gastón and everything at Carnaval is inspired by Díaz and his team’s travels around the world. A major attraction is the ice room, where a designated chef creates a variety of “bespoke cubes”, including ones shaped like diamonds. Drinks are also served in glassware created by eight different Peruvian artists. “El Gran Carnaval” is recommended for the full Carnaval experience – it’s a tasting menu of seven half-cocktails selected by the bar crew.
