Ellipsis Hospitality proudly unveils COBA, a groundbreaking experiential dining and drinking concept set to transform Bangkok’s culinary landscape. Located in the heart of the city, COBA officially opens its doors on November 7, 2024. Offering a vibrant multi-sensory dining experience that challenges the traditional, COBA is a gastronomic journey where food, ambience, and experience seamlessly blend.
Acclaimed Michelin-starred chef and visionary culinary curator Olivier Limousin brings his innovative expertise to COBA, where he will curate a pioneering dining experience that blends immersive culinary arts with immersive dining. Relocating from New York for this project, Limousin is the driving force behind the creative direction of COBA. Overseeing the cuisine is Executive Chef Sebastien Lalanne, whose extensive experience in globally renowned Michelin-starred kitchens informs the refined elegance of COBA’s gastronomic narrative. Combining his mastery of French cuisine with COBA’s dynamic menu, Chef Lalanne, having previously maintained a Michelin star, is excited to shape Thailand’s culinary landscape with the bold, inventive flavours set to become COBA’s signature.
COBA’s menu will offer a delectable fusion of Latin American flavours, refined with French techniques to present a tapas-style tasting experience unlike anything Bangkok has seen before. From the signature Tapas Tower, which showcases an elegant medley of seafood including tuna tataki and confit scallops with umeboshi and wagyu tartare, to unexpected flavour combinations such as humita gyoza with Joselito Iberico ham, every dish will celebrate the richness of local ingredients in an innovative and tantalising way. This multi-dimensional menu will push culinary boundaries, ensuring every plate is a sensory journey.
COBA will elevate the dining experience further with main dishes that continue to blend global flavours with local flair. Highlights will include the saffron and lobster ravioli, miso-glazed black cod, and grilled beef tenderloin with spicy Mexican mole and mini tacos which exemplify COBA’s commitment to ingenuity and culinary craftsmanship.

The first of two much-anticipated launches, COBA will be the flagship opening for Ellipsis Hospitality in Bangkok.
