
Pom Thaï Ibiza will open for the 2026 summer season on 1st May, marking the return of one of the island’s most coveted late-night dining spots for islanders in-the-know.
A long-standing fixture on Ibiza’s restaurant scene, Pom Thaï has built a loyal following for its high-energy atmosphere and modern Thai cuisine. Each season, it draws a mix of international visitors, returning regulars and music industry crowd – including globally renowned DJs and creatives – looking for a place where dinner naturally extends into the evening.
Launched in 2014, Pom Thaï began on the island of Ibiza, founded by French restaurateur–wine lover Johnny and Thai head chef Pom.
With deep roots in Ibiza’s community, art and wine, the restaurant is known for its shareable menu of bold, flavour-led Thai dishes, designed for informal, social dining. Evenings are unstructured and lively, with the experience shifting seamlessly from a browse in the restaurant’s considered boutique store for fashion and lifestyle pieces, to a social dinner on the terrace, and finally into late-night drinks.
The menu centres around contemporary Thai dishes designed for sharing, from fragrant curries and Thai basil stir-fries to grilled meats and lighter, flavour-led plates. Signature dishes include Kwyteiyw Neux with oxtail and beef cheek ‘POM style’, Moo Van caramelised pork with black mushroom sauce, as well as classics such as Som Tam Thaï green papaya salad and Toung Tong shrimp dumplings, all designed to be enjoyed across the table in a relaxed, social setting.
Following a strong first winter season in Courchevel, Pom Thaï continues to build an authentic community across both winter and summer destinations.
