Team of Dedicated Culinary Authorities Provide Guests with Expertise on Meat Selections at Gourmet Steakhouses Across Mexico’s Luxury All-Inclusive Properties

TAFER Hotels & Resorts – a leisure and hospitality company with a collection of award-winning hotels, luxury resorts, and boutique villas throughout Mexico’s most coveted beach destinations—is excited to announce the debut of its dynamic Meat Sommelier program, which will be implemented across TAFER’s signature steakhouse concepts Bocados Steak House, Karuma The Art of Grill and La Casona Steak House & Seafood Grill at select oceanfront properties in Cancun, Los Cabos and Puerto Vallarta. Like an expert wine sommelier, TAFER’s knowledgeable Meat Sommeliers will always be onsite at each of its gourmet restaurants to guide diners through the intricacies behind the meat selection process so they can choose a cut that best meets their unique preferences.

Steakhouse guests will be greeted by a dedicated Meat Sommelier who will walk diners through the restaurant’s selection of meat cuts and delve into their features including taste and type, source location, aging, and different types of cattle breeds from Angus to Simmental, Hereford, Charolais, Longhorn, Japanese Wagyu, among others. TAFER’s Meat Sommeliers are carefully selected to ensure they are well-versed in culinary knowledge, the meat selection, the aging and grilling process, the difference between USDA and Wagyu meat grades, and HACAP and food handling requirements.

Once a selection is made, the Meat Sommelier will suggest the appropriate cooking method for particular cuts and provide diners with a “Butcher Map,” which details the locations of each corresponding cut on the cattle and explains its tenderness, percentage of fat that affects taste, and additional specifics.

Resort guests can now utilize the Meat Sommelier as part of TAFER’s Gourmet Culinary All-Inclusive Plan at Bocados Steak House at Garza Blanca Resort & Spa Cancun, Hotel Mousai Puerto Vallarta, and Garza Blanca Preserve Resort & Spa Puerto Vallarta, as well as at Villa del Palmar Cancun’s La Casona restaurant and Karuma located in the TierraLuna Gardens Puerto Vallarta (not part of the all-inclusive plan).
